日本のきのこ生産は、戦後まで原木栽培が中心であったが、菌床栽培技術の普及により現在は施設内での通年・計画生産が主流となった。以来、安定供給が可能となり生産者戸数が減少する一方で総生産量は一定の規模を維持してきたが、近年は生産者の減少が加速し、減産に転じている。生産設備への投資増に伴う償却費や更新時の負担額も大きく影響している。また、菌床しいたけの生産コストの変化を試算すると、経営費全体で2025年において2022年対比13.6%増と試算されており、原材料費・資材費・エネルギー価格の高騰による運転資金への影響によって、事業継続に対するハードルは高くなりつつある。
きのこは、鍋物・炒め物など日常食材として「安価な食材」という消費者イメージが定着しているため、価格交渉力が弱く、量産が進んだきのこ種ほど低価格にとどまりやすい。財務面では固定資産への依存度が大きく、自己資本比率の水準も低いため、将来の設備更新や自動化投資に十分な財務余力があるとは言い難い。過去10年の収益改善は、価格上昇の影響よりも生産者のコスト削減努力による寄与が大きいことが示されている。
今後は既存生産者が再生産可能な環境を整えることを見据え、生産コストを可視化する指標の再整備、設備更新や自動化を支える補助事業・資本支援の充実が強く望まれる。

Japan’s mushroom industry developed stable supply with the widespread adoption of substrate cultivation, enableing year‑round, facility‑based operations. While the number of producers has continued to decline, overall output had been maintained for many years. In recent years this trend has reversed, as the accelerated reduction in producers has started to drive down total production. Rising depreciation costs tied to capital investments, along with the financial burden of equipment replacement, have further constrained profitability.
On the financial side, the industry is characterized by heavy dependence on fixed assets and low equity ratios, leaving limited capacity for future capital expenditures or automation investments. Profit improvements seen over the past decade have been driven primarily by cost‑reduction efforts rather than price increases.
Cost simulations for sawdust‑cultivated shiitake indicate that total operating costs in 2025 are expected to rise by 13.6% compared with 2022. Escalating raw material, equipment, and energy prices are placing additional pressure on working capital, raising the barriers to sustainable business operations.
