日本のきのこ生産は、高齢化や資材高騰の影響で生産量が減少が進む。直近の特用林産物生産統計を用いて、主産地の変動や主要品種の生産量の変化について述べる。

Japan has a wide variety of mushrooms in circulation, forming a large market. However, in recent years, production volume has been declining due to the aging of producers and labor shortages. This report analyzes mushroom production volumes by variety and region using the latest statistics. Recently, the demand for shimeji, maitake, and king oyster mushrooms has been particularly increasing.
